Burgers are a go-to dinner when I don’t have anything planned, but sometimes they can get to be boring and repetitive. Not this one! Take the average Mushroom Swiss Burger recipe over the top with rich and delicious caramelized onions. It takes a little more time, but we think it’s totally worth it. Keep reading for the recipe.

Adding caramelized onions to the typical Mushroom Swiss Burger recipe means you have to cook things in a certain order. While you CAN add the mushroom and onions together at the beginning, I wanted to make sure that the mushrooms picked up some color first. To ensure a nice browning of the mushrooms, remember what Julia Child said, “Don’t crowd the mushrooms.” 

Mushrooms release a lot of water when they cook, so if there isn’t enough surface area in your pan for the mushrooms to lie in a flat layer, the liquid that is released will result in a soggier, steamed mushroom. This is another reason I choose to clean my mushrooms with a damp cloth rather than washing them off under running water.

Caramelizing Onions

The key to deliciously caramlized onions is patience! If you rush it, you will end up with simply grilled onions. Don’t get me wrong, those are delicious, too, but not what we’re going for here.

Resist the urge to turn up the heat to nudge the cooking along. Keep the temperature at a steady medium and if you find your onions drying out before they are ready, feel free to add a splash of water to keep them going. 

As a last resort, if you’re getting a little impatient, you can add a pinch of baking soda to hasten the process, but it won’t give you exactly the same flavor as time. 

Adjusting Quantities

The quanities listed in this recipe are just suggestions; jumping off points, if you will. We are a family of 3 so this is what I used, but you can absolutely double this. But remember what I said about the mushrooms. If you add more, you’ll need to be using a large enough pan to give them room to breathe.

Mushroom Swiss Burger with Caramlized Onions

Ingredients

  • 1 lb. Ground Hamburger Prepare as you normally would for hamburgers
  • 4 slices Swiss Cheese
  • 1 Large Onion (white or yellow) Sliced
  • 1 ½ cups Sliced Mushrooms
  • 1 tsp. Worchesteshire
  • ¼ cup White Wine (can substitute water if you don't want wine)
  • 1 tsp. salt
  • 2 Tbsp. Butter or oil

Instructions

  • Wipe mushrooms clean with a damp paper towel and slice.
  • In 2 Tbsp. of butter or oil, sauté mushrooms over medium heat until a little color forms.
  • Slice an onion and add to the pan, stir to coat with the butter/oil, and add a pinch of salt to draw the moisture out of the onions.
  • Continue cooking over medium heat, stirring occasionally to keep the onions from burning.
  • After about 20 minutes the color of the onions should begin to deepen. At this stage add Worchesteshire sauce and wine (or water if substituting) to deglaze the pan. Stir to remove the bits on the bottom of the pan. Continue to cook out the wine while you prepare your burgers.
  • Cook your seasoned burgers how you normally would; in a pan or on the grill. Top with Swiss Cheese and allow it to melt.
  • Top your burger with the caramlized onions and mushrooms. This can be served as is, or atop a hamburger bun.

While we like to eat our burgers without one, this can absolutely be served on hamburger bun. I paired this with a dollop of rustic mashed potatoes and air fried broccoli to round it out.
